Deer Tartare with Dried Cranberries and Vodka



  • 1lb deer cut in small cubes
  • 2 chopped shallots
  • 3 tbsp olive oil
  • 1/4 cup dried cranberries
  • 2 tbsp of cranberry juice
  • 1 oz of vodka
  • 5 chive stems chives
  • 5 dill stems chopped
  • 1/2 lemon juice
  • Salt pepper


  • In a bowl, add cranberries and cranberry juice. Cover with plastic wrap and heat for 1 minute. Refrigerate for 10 minutes.
  • In a bowl, mix vodka, lemon, olive oil, salt and pepper. Add the cranberries and mix again. Finally, Add the rest of the ingredients and mix with a spoon. The mixture must be homogeneous. Refrigerate 10 minutes and serve immediately.
